Sweet potatoLately, the food scene is all about healthy, fresh and seasonal. With a mix of fresh veggies, raisins and walnuts, this sweet, savory and spicy slaw makes a great side for a late-summer picnic or barbecue.

Sweet Potato Coleslaw

Slaw Ingredients:

  • 1 ½ pounds sweet potatoes, peeled and box-grated
  • ½ pound raw carrots, peeled and box-grated
  • 2 cups green cabbage, shredded
  • 1 jalapeño, minced (optional)
  • 1 cup red onion, julienned
  • 1 bunch cilantro, stems removed
  • 1 cup yellow raisins
  • 1 cup walnuts, crushed
  • 1 cup raw garlic, minced

Dressing Ingredients:

  • ¼ cup apple cider vinegar
  • ¼ cup distilled white vinegar
  • 3 tablespoons honey (or more to taste)
  • ½ cup extra virgin olive oil
  • Salt and pepper to taste

Preparation:

  1. Mix slaw ingredients in a large bowl
  2. Mix dressing ingredients in a separate bowl, taste for seasoning and adjust
  3. Combine the dressing with the vegetables in two parts, taste and adjust seasoning again
  4. Enjoy!

*Note: all ingredients may be prepared a few hours ahead, but keep dressing separate and don’t combine with slaw until about 30 minutes before serving. Slaw will keep for about two days if refrigerated.
