Sun-dried tomatoes, Kalamata olives, goat cheese and chili flake give this shrimp linguine recipe an amazing punch of flavor. This recipe serves two – perfect for date night!

Ingredients

  • 16 ounces cooked spinach linguine
  • 10 each (26/40) Black Tiger shrimp, peeled and deveined, tail removed
  • 4 tablespoons sun-dried tomato julienne
  • 2 tablespoons Kalamata olives, pitted and halved
  • 4 basil leaves, torn
  • 2 tablespoons minced garlic
  • 2 pinches red chili flake
  • 4 tablespoons extra virgin olive oil
  • 3 ounces goat cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Method

1. Heat olive oil in a medium sauté pan and add garlic, tomatoes and shrimp
2. Cook until shrimp are ¾ done, then add warm spinach linguine
3. Season with salt, pepper and chili flake. Cook until done
4. Toss in basil, butter and goat cheese. Toss until butter is melted

Serve and enjoy!
