I like to have something light and sweet for my out-of-town guests to nibble on in the morning while I’m preparing my Thanksgiving trimmings. These muffins are absolutely delicious with a cup of coffee on a chilly Thanksgiving morning.
Dry Ingredients:
- 2 cups flour
- 1 ½ tablespoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2/3 cup sugar
- 1 cup butter
Wet Ingredients:
- 1 cup buttermilk
- 1 cup sour cream
- 6 eggs
- 1 tablespoon vanilla
Fruit Filling:
- 1 ½ cups blueberries
- 1 pound cream cheese cut into 12 pieces
Method:
- Combine all dry ingredients in a stand mixer bowl. Mix on medium until thoroughly combined
- In a separate mixing bowl, combine all wet ingredients and mix until smooth
- Fold dry ingredients into wet, add fresh blueberries, portion into muffin cups and garnish with a cube of cream cheese
- Bake in a preheated oven at 350 for approximately 25 to 30 minutes
