We’ve thought for some time that our Pub Burger at The Pearl is the best in Columbus, so we’re putting our burger where our mouth is, so to speak. On April 23, we will be facing off against some other great restaurants in town for the ultimate burger bragging rights at the second annual Best Bites: Burgers event, sponsored by Columbus Underground and Shadowbox Live.
We’d love for you to come cheer us on at Brewmasters Gate as we prepare our Pub Burger:
We start with the freshest meat, ground daily in house, then charred to seal in the juices and give the beef a delicious crust. We top the burger with a drizzle of glaze de viande – veal stock that is reduced for four days into an unbelievably flavorful glaze. Next, we add a layer of creamy cambozola cheese. If you haven’t tried cambozola, I’d say it’s halfway between brie and bleu cheese – slightly pungent and incredibly savory – it melts beautifully on a burger. We serve it all up on a fresh, buttered brioche bun with a side of our slightly sweet and tart house-made tomato jam.
The first thing that hits you when you bite into this burger is the intense umami flavor from the charred beef and sharp cheese, which is complemented and balanced brilliantly by the hint of sweetness from the tomato jam and the rich, buttery brioche. It is the perfect bite.
